I can still remember my first quesadilla. It was 7 years ago at my favorite pub Regeneration in Warsaw. It was like love at first sight. – What is this? – I asked. – I want to eat it everyday!
A quesadilla is a wheat tortilla or a corn tortilla filled with cheese, a savoury mixture, and/or vegetables, cooked often on a griddle, then folded in half to form a half-moon shape. They are typically filled with Oaxaca cheese (queso Oaxaca). Oaxaca cheese is a stringy Mexican cheese made by the pasta filata (stretched-curd) method. Usually cooked without the addition of any oil.
- 4 wheat tortillas,
- 100 g Cheddar cheese, grated,
- 100 g mozzarella cheese, thinly sliced,
- 125 g thinly sliced chorizo,
- 1 ready-roasted red pepper, sliced,
- guacamole, to serve (not necessary)
Scatter the red pepper and chorizo over 2 tortillas, then sprinkle over the cheeses. Place the remaining 2 tortillas on top and gently press together.
Heat a pan until hot, add a tortilla and cook for 1-2 minutes until lightly browned, then turn the tortilla over and cook for a further 2-3 minutes until the cheese has melted. Remove from the pan and keep warm. Repeat with the remaining tortilla.
Serve the tortillas cut into wedges with guacamole but not necessary.
